Another great low carb comfort food recipe from Linda’s Low Carb (http://www.genaw.com/lowcarb/chewy_pean utbutter_candy.html):
2 TBS butter
1/4 cup natural chunky peanut butter
1/4 cup Splenda
1 cup chocolate whey protein powder
1/4 cup Da Vinci SF Vanilla syrup
1/4 cup Salted nuts (optional)

* Melt the Butter, and mix with Splenda.
* Add the Peanut Butter to the mix until smooth.
* Mix protein powder until crumbly
* Add SF syrup, and the mix should turn glossy and much easier to form into 2 mini loaf pans
* Freeze mixture for 1 hour, and it should be able to be eaten.

Per 1/8 Recipe
110 Calories; 7g Fat; 9g Protein; 3g Carbohydrate; trace Dietary Fiber; 3g Net Carbs

Who knew a dish could be so controversial! I found a recipe for Larb and modified it to make it low carb and also for the ingredients I had on-hand. I’ve never claimed this is a 100% authentic version (the original recipe included rice – not low carb) and besides, in cooking, I think people make things different ways based on their tastes. Too many people were finding this recipe and getting mad at me for not doing this or that right. One comment I even found so offensive I deleted it. YOU may have grown up on Larb but realize that there are probably many, many people out there who have no clue how to make it or have never even heard of it, so instead of getting angry and calling other people “so freakin white” be proud that someone found your cultural dish interesting enough that they wanted to try making their own version of it and share it with other people (who also have probably never heard of it). I’m changing the name of the recipe in the YouTube post so people don’t think this is how to make THE one and only larb (btw, there are tons of different versions out there but whatever) – this is MY version. Relax people, it’s just food!

These wings are some of the best reasons to go on the Atkins Diet. They are completely legal for all phases of the diet and absolutely delicious. The Diet Coke is a unique ingredient, but it really does the trick. I think by adding the wings to the simmering sauce, the collagen helps thicken the sauce as well.

Ingredients
3 pounds chicken wings, separated at joints, tips discarded
1 cup Louisiana-style hot sauce (Franks Hot Sauce recommended)

1 can Diet Coke with Splenda
1 tsp cayenne pepper, or to taste
1 tsp ground black pepper, or to taste
1/2 tsp Thyme
1/2 tsp Garlic Powder
1 tablespoon soy sauce
1/2 TBS Dried Chopped Onions

Instructions:
* Cut the wings into pieces.
* Mix other ingredients into large pot and start simmering.
* Add wings to pot to give flavor
* Heat Oil to 350-375F degrees
* Add wings to fryer and cook until done (12-14 minutes)
* Add wings back to Buffalo sauce and coat thoroughly

3 pounds chicken pieces or 1 ½ boneless skinless chicken

2 tablespoons vegetable oil

4 cardamom pods (optional)

1 2-inch piece of cinnamon stick (optional)

1 medium onion, finely chopped

4 garlic cloves, chopped

2 teaspoons fresh ginger, chopped

1 medium tomato, finely chopped

1 teaspoon in powder

1/2 teaspoon turmeric

1 tablespoons coriander powder

1/2 teaspoon cayenne pepper (optional)

1/2 teaspoon fennel seeds, coarsely ground

1 teaspoon black pepper, coarsely ground

1/2 cup plain nonfat yogurt

1 teaspoon salt

1/2 cup water

2 tablespoons chopped cilantro

1 tablespoon fresh lemon juice

Remove the skin and all visible fat from the chicken pieces. (I often have the butcher clean the chicken.) Cut 23 slits, 1 inch long and 1/2 inch deep, in each piece of chicken. Set aside.

Heat oil in a heavy skillet over medium high heat. Add the chicken pieces in a single layer and fry for 35 minutes, turning the pieces over once or twice until they are white. Transfer the chicken to a plate using a slotted spoon.

Add in powder, cardamom pods, cinnamon stick, chopped onion, garlic and ginger to the oil. Fry for 78 minutes, stirring constantly, until the onions are golden brown.

Stir in tomatoes, turmeric, coriander powder, cayenne pepper, ground fennel seeds and black pepper. Fry for 23 minutes. Whip yogurt with wire wisk and add 1 tablespoon at a time, stirring constantly. Fry for another 2 4 minutes.

Add the chicken and sprinkle with salt. Stir to coat the spice mixture evenly. Pour the water evenly over the chicken. Bring to a boil. Reduce heat to low. Add the cilantro and gently stir the chicken. Cover tightly and simmer for 2025 minutes. Chicken should be tender to the touch but should not fall apart.

Transfer to a serving platter. Sprinkle with lemon juice.
