The reason your peppers and onions are wet is that you salted them too early. This causes them to sweat, and they steam in their own juices. Also, are you making a quesadilla, as the title says or a fajita, as you said at the end? Of course, it is really a fajita, given the ingredients. And, I was surprised a trained chef did not know that a quesadilla always has cheese, hence the name… Good luck and happy cooking!

you’re right, it’s not a quesadilla. a quesadilla’s most important ingredient is cheese, second chicken. peppers and spices would be considered condiments. this has no cheese, therefore its not a quesadilla. however, in the video, he often refers to his dish as a fajita. a fajita’s two primary ingredients are meat (any type of meat or shrimp, not just chicken) and peppers. that pretty much describes what he was making.
