What are some easy to make chicken breast recipes?
Having a competition in my cooking class. All help is appreciated!

Oh, and any ideal sides dishes? Such as green beans?

I actually have the page of recipes on Frigidaire’s site bookmarked on my computer and check it out often for new recipe ideas as they are constantly adding new ones to the site weekly. I’ve only prepared the Chicken St. Rémy once, but it did turn out really great, everyone enjoyed it. Waiting on my new occasion to make it again! Enjoy!

One of my favorites is to make a pot of rice (I have a rice steamer) and set that aside, keeping it warm. Then I simmer chicken breasts in Mexican salsa right from the jar (just enough to cover the chicken) in a covered pot for about 20 – 30 minutes, turning once. I then remove the chicken, put a breast on a plate with some rice, and then scoop the chicken/salsa mix onto the rice, to kind of make Spanish rice. It comes out pretty good. And, you can also serve it with refried or whole pinto beans.

There’s a really good recipe from campbell called chicken and rice or cheesy chicken and rice. You can go to the website for campbells soups and get the exact measurments. But you use rice, chicken breast, cream of mushroom soup, and i think cream of chicken. You mix it all in a casserole dish and you can add mixed frozen veggies if youd like. yummy

Ingredients:
8 chicken breast halves, skinned
8 slices Swiss cheese
1 can cream of chicken soup
1/3 cup white wine
1 cup Pepperidge herb stuffing mix
1/4 teaspoon melted butter or margarine
Directions:
1. Put chicken in very lightly greased baking dish. Top with cheese.
2. Combine soup and wine. Spoon over chicken.
3. Sprinkle with stuffing. Drizzle melted butter over chicken.
4. Bake at 350 degrees 45 to 50 minutes. Serves 6 to 8.
