I am starting to go on a fitness diet due to me recently getting a membership at the gym. So basically I want to eat healthy while I can gain muscle. What are some quick and easy recipes involving chicken or other common foods? Thanks

Drizzle the chicken breasts with olive oil and minced garlic or use italian salad dressing. Bake at 400 degrees for 20 minutes, turning halfway through. Then use one or more below to accompany it.

Chicken Rice
2 cups water
1 cup uncooked long grain white or brown rice
2 chicken bouillon cubes
Parsley
Salt and pepper to taste

Bring the water and chicken bouillon cubes to a boil in salted water. Add the rice, pepper, parsley and cover and turn the heat to low. Simmer for 15 minutes for white rice or 40 minutes for brown. Remove from heat and let sit with lid on for 5-10 minutes. Fluff.

Pasta
Dry spaghetti other pasta
1 tablespoon olive oil or smart balance light margarine (melted)
garlic powder
salt
pepper
Parsley or other herbs desired

Boil the pasta in salted water according to package directions. Mix a little garlic powder, salt and pepper into the oil or butter. Drizzle over the pasta.

Rosemary Potatoes
1-2 potatoes
1 tablespoon olive oil (with a drop of white truffle oil, optional)
garlic powder
onion powder
rosemary
thyme

Peel and dice the potatoes. Bring a pot of water to a boil. Boil 20 minutes or until tender. Drain. Whisk together the oil and herbs in a glass with a fork. Drizzle over the potatoes.

Vegetables
Carrots, green beans, broccoli, cauliflower, any vegetable you want

Microwave: cook according to package directions or use a ziplock steam bag
Stovetop: bring a pot of water to a boil, boil for time as directed on package
Rice cooker steamer: Fill the bottom portion with some water. Place steamer basket in. Place vegetables on top. Press cook and lift the cooking button to warm when they are tender.
Put a dab of smart balance light margarine on top.

    sprinkle some italian seasoning or dressing mix on a boneless skinless breast, then top with some Parmesan cheese. Bake at 400F for 20 minutes. mmm

    Have a look on the Men’s Health forum. It’s full of piss taking b*stards but they do give good advice on healthy eating and fitness regimes!

    Cashew Chicken and Snow Peas Recipe

    3/4 lb. skinless, boneless chicken breasts
    freshly ground pepper
    1/2 lb. fresh snow peas
    3 garlic cloves
    3 T. peanut or vegetable oil (divided use)
    1/2 C. salted roasted cashews
    1/2 C. chicken broth

    Cut chicken into thin strips and season with pepper. Remove stems and strings from snow peas and cut in half diagonally if very large. Finely chop garlic.

    Heat 2 tablespoons oil in a wok or large skillet. Add chicken and stir-fry over high heat until just cooked through, 2 to 3 minutes. Remove to a plate. Add remaining 1 tablespoon oil to wok and stir-fry snow peas over high heat 1 minute. Reduce heat to medium. Add garlic and cashews and cook, stirring, 1 minute.

    Return chicken to pan, add 1/2 cup chicken broth and simmer until heated through, about 1 minute.

    Makes 4 servings.
