This specific dish …
This specific dish has been my favorite for years, but I was never able to go to restaurants very often; so I was always looking for the recipe. Sadly, all of the ones I had tried were horrible.
I decided to give this one a try last night, and to my surprise it was absolutely perfect!
Eureka, I’ve finally found it! For this, I shall pledge my love to you for all eternity =P

The oyster sauce is …

The oyster sauce is the base of the flavor for this dish. If you were to change it it would taste different. If you are vegetarian, or don’t like oysters, there are vegetarian versions of this sauce – I think they are mushroom based. These would work well in this dish

Yes you can add a little to the sauce; either the bean paste or some hot chili garlic sauce. If you want just heat in the chicken, you can add a little chili oil to the pieces when you mix in the garlic salt
