my g/f was sauteing some chicken and through it in to the sauce before it was fully cooked. we both think it will finish cooking in the sauce, but we just wanted to make sure.

Yes, it should, depending on the thickness of the chicken and the ingredients of the sauce. Sauces that need to reduce will usually finish cooking the chicken if it’s pounded out evenly. If one side is thicker than the other (like chicken breasts usually are), then you may want to check it. My rule of thumb is to cook the chicken 70%, then finish it with the sauce, especially when I’m doing a small amount at home. When in doubt, cut a section of the chicken at its thickest part, or pound it out to make an even cooking surface or cook it a bit longer, the sauce will keep it moist. Hope this helps you out today and enjoy your wonderful dinner!

it will just make sure you cook it long enough to ensure that the chicken is cooked through.

The only way to be sure is to cut it open & check that it’s not pink.
Get yourselves one of those temperature forks; better to be safe.
