This is a delicious, mouthwatering, simple dish, very much loved and a favourite in the Philippines, that involves chicken pieces traditionally braised in soy sauce, garlic, vinegar and bay leaves.

INGREDIENTS:
2 chicken drumsticks
2 chicken thighs
4 cloves of garlic, crushed to let the flavour ooze (I love garlic!)
1 cup vinegar (preferably rice vinegar)
1 cup dark soy sauce
2 cups water
4 bay leaves
a pinch of ground black peppercorns

METHOD:
Place chicken pieces in heavy-based pan at medium heat. Once lightly browned, add water, vinegar, soy sauce, garlic and bay leaves and then let it simmer for about 25 minutes. When tender, add more water if the sauce has become quite thick and tastes strong, throw in a pinch of pepper and let it cook for a few more minutes and then serve with steamed rice!
