Wrap a brick in …
Wrap a brick in foil. Place it in a pan and turn on the stove. When they are both hot, use a oven glove to lift the brick. Put the panini in the pan and put the hot brick on top. Works great with a cast iron pan.

Hey Jess,
I tried this today with some modifications…turned out great! Used Arnold’s sandwich thins (I don’t know that we have Irresistables here in the states) and bbq sauce (1 T) instead of mayo or mustard. I used my George Forman grill and voila! It’s tasty and fast. Thanks for the idea!
