Very cool video, Thanks for sharing, I just got a brinkman smoker last week and am just wanting to learn, I will be doing chicken today, with hickory, I like the idea about soaking the wood and placing in foil paper, Will give that a try.Thanks

Looks good, Dave – I just notice subtle changes like that… Hey- I’m making some smoked chicken in the back yard this evening. Just some hickory and mesquite wood here in AZ – four hours (six or seven beers) to cook; off the smoker and served with roasted potatos & onions, served with batons of red/green/yellow bell peppers & carrots over jasmine rice cooked in the bird’s own chest cavity : ) I love your channel, Dave!
