Making chicken salad for a wedding party. Buying boneless chicken but don’t know how many pieces need for 150 people.

If you take into consideration that chicken salad is only 50% chicken, an average person will consume 1C of salad, 8oz. and consider that will not be the only thing consumed. The best guess would be 4oz X 150 = 37.5lbs. That is your base.

    figure close to 1/2pound each guest so my estimate is 75 pounds.

    40-60 pounds……..figure to be generous 1/3 lb per person approx. That would cover seconds for the hungry and enough for everyone.

    If you are using white meat (boneless chicken breast) buy 150 pieces,1 per person and maybe a few extra. If you are using dark meat (boneless thigh) buy 300 pieces, 2 per person they are alot smaller and maybe a few extra as well.

    Let me give you my all time favorite recipe for chicken salad. Whenever we have picnics or gatherings this is the first dish that dissappers. Enjoy!

    Curried Chicken Salad Sandwich Recipe

    Dressing:
    2 cups mayonnaise
    1/2 cup commercial chutney
    3 tablespoons mild curry powder

    Salad:
    6 bone-in chicken breasts
    Kosher salt and freshly ground black pepper
    1/2 cup coarsely chopped walnuts
    1/2 cup dark raisins
    3/4 cups finely chopped celery
    4 croissants

    To make the dressing: Combine the mayonnaise with the chutney and the curry powder in a small bowl. Mix well and set aside.
    To prepare the sandwiches: Season the chicken breasts with salt and pepper then put them in a large skillet. Add water to cover. Put a lid on the skillet and simmer the chicken until it is cooked through, about 20 minutes. Remove the chicken from the poaching liquid and refrigerate for at least 1 hour. When the chicken is chilled remove the skin and cut the meat from the bones. Dice the meat and place it in a large bowl. Add the walnuts, raisins, and celery and mix well. Moisten the salad with the curry dressing. Cut the croissants in half. Fill each with chicken salad and serve.

    If you want alot of chicken in it then 150 so its kinda like a piece per person but that would make it chicken in every bite, so 75 would be good too so its not like CHICKEN salad

    i would get the thigh fillets because it has alot more flavour than the breast and its more moist!
    i would say you would need about 25kgs of chicken.

    Figure that a 1/2 a chicken breast should be more then enough for one person.
