I have a leftover chicken breast I want to make tacos out of, but it was a little bit over cooked to begin with, so it isn’t really shred-able. I’d rather not just chop it up finely, although I could. I was thinking of simmering it in just a little bit of water with some taco seasoning; is that stupid?
no, that’s exactly what you should do. Use about two cups of water, 1 pack of taco seasoning, and let it simmer. The water will slowly cook off as it makes the meat more tender, and then you can break it up.

well you dont have to do that, you can chop it up with different chop styles so they dont have tobe perfect, but you can just put it in the tortilla if the chicken already has seasoning on it, but if not you can simmer it wiht abit of seasoning

just warm it up and cut it like fajitas chucks and season it with what ever you want

Sometimes I shred mine and sometimes I just leave it in large enough slices. I heat up a little chicken broth or water to soften up the chicken. Then add chili powder or taco seasoning and a squeeze of lime.
Hope that helps. I am a huge fan of chicken breast and love it because you can do so much with it, especially turning the left overs into tacos or nachos.

chop it up and add onions and a little cumin and chili powder. some salt, and garlic cook it up in water until chicken is done and place in shell. it will be tender if you chop it and heat it in water

If you want to moisten the chicken, simmer it in a little chicken broth. Shred it like you were going to….you got the idea.

Thinly slice then simmer in a bit of water or chicken broth, with some onions, cumin and a dash of chili powder.
It will put some liquid back into the chicken as long as you are careful.

Cut off dry parts of meat. Chop up what’s left. Toss w/ picante sauce or salsa. Warm up, slap into some hot tortillas alogn w/ cheese adn sour cream and chow down.

Shred or chop the leftover chicken and heat, covered in the microwave.
Step 2Soften the flour tortillas on a burner or in the microwave. Spoon a small amount of chicken, cabbage, tomato, cheese, cilantro and onion into the center of each tortilla. Fold the tortilla over the filling, and use it to pull the filling into a tight bundle. Tightly roll the tortilla and secure with a toothpick.
Step 3Heat a grill pan over medium high heat. Lightly brush each rolled taco with a small amount of oil, and place on the hot grill pan. Cook both sides of the tacos until they are lightly toasted and have grill marks.
Serve hot with salsa or taco sauce, sour cream, guacamole, pinto beans and Mexican rice.
Step 4If you don’t have a grill pan, place the lightly oiled tacos on a baking sheet and place under the broiler. Toast each side until lightly browned and serve.
