I fell asleep with my A/C on and it was like brrrrrr, now i want chicken soup,my chicken is boneless and it’s frozen solid.

Chicken Stew

2 pounds boneless, skinless chicken breast, cut into 1-inch cubes

3 medium onions, quartered

2 carrots, cut into 1-inch thick slices

2 potatoes, cut into 1-inch slices

2 can (14-ounces each) fat-free chicken broth

1 teaspoon celery seed

1 teaspoon dried thyme leaves

1/2 teaspoon black pepper

8 ounces mushrooms, halved

2 cup frozen mixed vegetables such as corn and peas

In a large bowl combine the chicken, onion, carrots, potatoes, and broth. Stir to mix well.

Pour into crock pot. Stir in the celery seed, thyme, pepper, mushrooms and vegetables.

Cover and cook on Low until the chicken is done and the vegetables are tender. This should take approximately 7 to 9 hours. You can cook on High for 4 to 6 hours if you would like. Serves: 8.

Chicken Soup
2 to 3 uncooked chicken breasts
2 carrots, sliced
2 celery stalks with leaves, cut into 2-inch pieces
2 to 3 potatoes, quartered, or 1/2 cup rice
2 onions, sliced (optional)
1 can chicken broth
2 cups water
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon parsley
1/2 teaspoon basil

Put all vegetables in bottom of crockpot; add chicken. Top with salt, pepper and liquid. Sprinkle with parsley and basil on top. Cook on HIGH for 4 hours or on LOW for 8 hours.

If using rice instead of potatoes, add the last 10 minutes of cooking. Taste to determine when rice is done. Remove skin and bones from chicken.

I would thaw the chicken and cut into bite size pieces and first boil the chicken in water as to not contaminate the other foods first. Then place the chicken into the crock pot with some chicken broth, cut up carrots, celery, salt, pepper, and cook on low for 4 hours. Then pour in some egg noodles and cook for an additional 2 hours or so until all of the vegetables and noodles are soft.

Eat with some warm bread or crackers and have a soup.

You must defrost the chicken or you will end up with food poisoning.
