you can lift the …
you can lift the skin off the breasts and fill inbetween the breat and skin with seasoned butter, which is olive butter salt and peper, you can mix this yourself and fill it in between the breats and skin, make sure you spread it around to cover the breast meat, that will stop you from cooking it upside down and this will keep your breats moist and flavoured. try it, it works

The only problem …
The only problem with cooking the chicken (breast side up) is that the breast meat is quite dry. I always cook my chicken upside down, because the juices from the fatty leg meat will penetrate the breasts and make them lovely and moist – that almost sounds rude! lol
