Everything about this video works; I love it.
Essentially, this is the same as a dish I make regularly, Kotopuolo Lemonato. My recipe came from Vefa, the Greek version of Julia. The recipes are essentially identical.
It is impossible to go wrong with this dish. For convenience, I am not about using pre-cut parts in lieu of a whole bird.

Totally! Kosher (or other coarse) salt is essential in cooking. The coarse salt serves as a flavor enhancer. The goal isn’t for the final dish to taste like salt, but rather to bring out all the flavors of the dish.
Best to follow the guidelines that the chef of the recipe has laid out regarding salt. If it’s a little too much for your tastes (everyone’s are different) then you’ll know the next time to adjust the seasoning accordingly.
