So I cooked this …
So I cooked this tonight, it was amazing! I actually used regular mushrooms, and a red pepper with it as well, and I used canola oil instead of peanut oil. But YUM!

I tried your recipe …
I tried your recipe and was amazed how tender and moist the chicken pieces were (as you said they would be).
I will make this recipe again with cut pieces next time (probably cut up thighs). In doing so, I would take the skin off first. I agree that the skin would come out slimy.

The chicken breast …
The chicken breast peices come out tender and moist. I have never tried this with cut pieces of chicken; and I’m not sure how the skin would turn out if you left it on either. I’m thinking it may come out a bit slimy. I’ll have to experiement and see. If you try this, let me know how it turns out. Thanks for writing and watching

Wow…this looks so …
Wow…this looks so intriguing! I have been looking for new ways to cook chicken, and this is the way! Can you tell me what the texture comes out like? Is the chicken breast pieces sufficiently moist? Have you ever prepared foil wrapped chicken this way with cut up chicken pieces instead (with bones)?

I couldn’t find …
I couldn’t find wood ear mushrooms, so I substituted Porcini mushrooms, which were far too strong in flavour and overpowered the dish, so I guess you should only substitute button or chestnut mushrooms?

Grrr, you’ve done …
Grrr, you’ve done it to me again.
Been preparing a Chinese Banquet for some friends this weekend and now I have to go buy chicken and tinfoil too.
You’re costing me a fortune. LOL.
So the menu is;
Egg Fried rice
Noodles, with Broccoli and Bamboo shoots/beansprouts
Crispy beef with a honey, chilli sauce
Tempura prawns
Hoi Sin Pork
and your new chicken recipe.
I think I’ll need wheelchairs to get my guests out of the house after that.

You are a culinary …
You are a culinary genius! I would have never in a million years thought of frying food wrapped in foil! This would be a perfect application for a hot day, using the deep fryer. Or anytime for that matter.
I live in a very small town so my options for foods are limited, so I have a couple of questions:
Would white wine work?
Would regular sliced button mushrooms work?
Also, could I do this same recipe with boned skinless chicken thighs?
You are fantastic, I always look forward to your recipes!
